Carmelized apple coffee Cake

Ingredients

  • 1 1/2 C flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 C sugar
  • 1/2 C + 5 T. butter, softened
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 C sour cream
  • 1/2 C packed dark brown sugar
  • 2 large granny smith apples in 1/4" slices
  • add cinnamon to the apples

Preparation

Step 1

Mix flour, baking powder, salt, in a medium-size bowl; set aside.

In mixer, bowl, beat 1/2 C butter until creamy. Add sugar and beat until light and fluffy. Add egg and vanilla, and beat until well blended. Reduce speed to low. Gradually add in flour mixture, then sour cream.

Melt remaining 5 T butter in an oven-proof 10" non-stick skillet. Add brown sugar; stir 2 minutes. Add apple slices to the pan and reduce heat to medium-low. Cook about 10 minutes or until tender. Let cool 5 minutes.

Spoon batter over apples, and spread to the edge of the pan. Bake at 375 degrees for 30 minutes, or until golden brown. Cool on rack 20 minutes. Run knife around the edge. Carefully invert onto a plate.
