This is a hearty and healthy cookie that can be eaten as a snack. Feel free to experiment with the recipe, consider using agave nectar instead of sugar, and 1/4 cup applesauce instead of shortening, if you're feeling creative. Note that honey and applesauce soften cookies more than butter does.

Ingredients

  • 1 Egg
  • 1/2 tsp Baking Soda
  • 1/4 cup Apricot juice
  • 1 tsp Ginger
  • 3/4 cup Vegetable shortening
  • 1 tsp Allspice
  • 1 1/2 cups Firmly packed brown sugar
  • 1 tsp Cloves
  • 2 tsp Cinnamon
  • 1 cup Whole wheat flour
  • 2 cups Rolled oats
  • 1/2 cup Powdered milk
  • 1 cup Wheat germ
  • 1 tsp Salt
  • 1 cup Chopped dates
  • 1 cup Chopped nuts

Preparation

Step 1

1. Preheat oven to 325°.

2. Beat together egg, juice, shortening and brown sugar.

3. Sift together flour, powdered milk, salt, soda and spices. Add to first mixture.

4. Stir in oats, wheat germ, dates and nuts.

5. Drop by teaspoonfuls onto a greased cookie sheet.

6. Bake 15 minutes. Bake longer if a crisper cookie is preferred.

Remove and cool on a wire rack.
