Chewy Pecan Pralines

Ingredients

  • 2 cups Sugar
  • 2 cups Light corn syrup
  • 2 cups Unsalted butter (4 Sticks)
  • 2 cups Whipping cream
  • 2 tsp Vanilla Extract
  • 7 cups Pecan pieces or halves

Preparation

Step 1

1. Heat the sugar and corn syrup in a saucepan until a candy thermometer registers 245 degrees, stirring frequently.

2. Remove from heat. Stir in the butter. Add the whipping cream gradually, stirring constantly.

3. Return to heat. Cook for 45 to 60 minutes or until a candy thermometer registers 242 degrees, stirring constantly.

4. Remove from heat. Stir in the vanilla and pecans.

5. Drop by spoonfuls onto buttered foil. Let stand until cool.

Wrap the pralines individually in plastic wrap.
