Pork Chops with Pineapple Salsa

Ingredients
- 1 cup medium or long grain rice
- 1 pineapple, peeled, quartered lengthwise and cored
- 1 tbsp minced peeled ginger
- 1 tbsp vegetable oil
- 1 tbsp soy sauce, plus a splash for salsa
- 1/2 tsp chinese five spice powder
- 1 bunch scallions
- 4 bone-in pork chops
- Pinch red pepper flakes

Step 1
Combine the rice and 1/2/3 cup water in a medium saucepan and bring to a boil.
Cover, reduce heat to low and cook until rice is tender and water is absorbed (15 minutes).
Remove from heat and let stand until ready to serve.
Meanwhile, cut off a 2 inch piece of pineapple and grate it on the coarse holes of a box grater.
Stir in ginger oil, 1 tbsp soy sauce and 1/4 tsp five spice powder.
Add the scallion and pork chops and turn to coat.
Let marinate at room temperature for 10 minutes.
Rub remaining pineapple with remaining five spice powder.
Preheat grill to medium high.
Grill pork chops until just cooked through (3 minutes per side).
Grill scallions and pineapple turning occasionally until charred (3 minutes).
Roughly chop pineapple and scallions and transfer to a bowl.
Add red pepper flakes and a splash of soy sauce and toss.
Serve pork chops with the salsa and rice.
