Ingredients
- 2 onions, peeled and chopped
- 2 tbsp butter
- 3 ripe tomatoes, sliced or 1 cup canned tomatoes
- 5 cups consommé
- 1/4 tsp thyme
- 1 bay leaf
- 1 sprig of parsley
- 1 tsp sugar
- 1/4 cup uncooked Dainty Rice
Preparation
Step 1
1. Melt the butter, add the onion and brown over low heat, uncovered, for 10 minutes, stirring frequently with a wooden spoon. Add the fresh tomatoes or canned tomatoes and simmer over medium heat for 10 to 15 minutes.
2. Add the liquid, thyme, bay leaf, parsley, sugar and rice. Cover and cook over medium heat for 20 to 30 minutes.
