Ingredients

  • 1 lb ground sirloin, very lean
  • 1 C chopped yellow onion
  • 1 15 oz can black beans, drained & rinsed
  • 1/2 C chopped red, yellow and bell pepper
  • 1/4 C diced green chilies (optional)
  • Nonsstick cooking spray
  • 6 light flour tortillas
  • 1/2 to 3/4 C salsa
  • 6 oz reduced fat sharp cheddar cheese
  • 1/2 C non-fat sour cream

Step 1

Preheat oven to 450 deg. Cook beef and onion in nonstick frying pan until nicely brown. Remove from heat and stir in beans and peppers. (Can use only one color of peppers if you so desire). Add chili peppers. Place torrtillas in dish to cover bottom. Spread at least 3 T of salsa over tortillas, then 1/3 beef/bean mixture, and 1/3 grated cheese. Repeat with another layer of tortillas, salsa, 1/3 beef/bean, 1/3 cheese. Top with remaining torillas, sour creamand salsa before adding beef/bean and cheese. Bake for 10 minutes. This can be made ahead of time and refrigerated. Remove from refrigerator about 10 minutes before putting in the oven and enjoy. It warms up well the next day.
