Ingredients

  • 2 small baking potatoes
  • 1 oz cream cheese (cubed and softened)
  • 1 tbsp snipped chives
  • 1/2 tspoon dried basil crushed
  • 1/8 tsp salt
  • dash pepper
  • 1 1/2 - 2 tbls milk
  • paprika
  • cheddar cheese

Step 1

Prick potatoes with a fork and bake in 425 oven for 45 - 50mins or until tender. Cool slightly. Cut potatoes in 1/2 lengthwise. gently scoop out each potato half leaving a thin shell/put shells aside.

Put pulp in a small mixer bowl. Add cream cheese, chives, basil, salt and pepper and beat until smooth. Add milk a tbsp at a time, beating until potato mixture is fluffy.
Spoon potato mixture into shells and sprinkle with paprika and cheddar cheese. Place under broiler until browned and crispy.
