Ingredients
- 5-6 - 2-3inch diameter sweet potatoes
- 2 sticks of butter
- 1 lb box dark brown sugar
- Kosher salt
Preparation
Step 1
We make these the night before so that they have time to soak in the juice. Use about 5-6 of the 2-3 inch around sweet potatoes. Boil them until they are just tender and easy to peel. Peel, cut them in half and then slice them. Melt 2 sticks of butter and add a lb. box of dark brown sugar. (If you need more sauce add another half a stick of butter and about a 1/4 of a box of sugar) Stir until the sauce is bubbly and thick. Add sweet potatoes and stir gently. Add half of them to a baking dish, salt that layer then repeat salting the second layer and then cover with a lid or plastic wrap. The day of heat them up in the 350 oven covered with foil for about a half hour or until heated through and bubbly.
