Lumpia

Ingredients

  • 1 1/2 lbs very lean ground beef
  • 1 small yellow onion
  • 1 bag shredded carrots
  • 1/2 bag of celery hearts
  • 6 or 7 cloves of garlic
  • soy sauce
  • pepper to taste
  • 1 head of napa or savoy cabbage
  • 2 packages of Lumpia or Spring Roll wrappers (25 in each package) keep in fridge to thaw and until ready to wrap as they will dry out

Preparation

Step 1

Brown ground beef and drain well. Finely chop onions, carrots, celery and garlic. I use a small food processor and I even chop the shredded carrots in the food processor, be careful not to process vegetables to mush. Hand chop cabbage. Saute or steam cabbage and drain. Saute onion, carrots, and celery in pot until soft. Add garlic and cook until fragrant about 30 seconds. Add beef and cabbage to big pot. Mix in generous amount of soy sauce and some pepper. Cook until all ingredients well blended and you can smell it through the entire house. YUM. Allow to cool for about an hour. Sometimes it is good to drain one more time in a small holed strainer since the veggies and cabbage produce a lot of water.

Here is the hard part to explain: I may try and send pictures for everyone
Make sure you buy lumpia or spring roll wrappers and not egg roll wrappers you can find them at any Asian market . Lumpia wrappers are extremely thin and you will have to peel these apart very carefully and are circular wrappers these take longer some people think they taste better than spring roll wrappers but I can't tell much of a difference.

For Lumpia wrappers:
Take a small teaspoon full of your cooled stuffing and place toward the edge of the wrapper. Fold tip of wrapper that is closest to you over the stuffing and roll over once then fold in sides and continue to roll. When you get to end of wrapper use your finger and dab into a small bowl of tap water then run your wet finger over the end of the wrapper then continue to roll till sealed. I sure hope this makes sense.

For Spring roll wrappers:
these are square so you will turn them so one point is towards you then do the same as above.

To Cook:
Fry in Vegetable Oil or Canola Oil
You can freeze these in freezer bags or I freeze any leftover stuffing
