Easy Tasty Fig Jam

Water, sugar, lemon juice and FIGS are all it takes to make delicious fig jam in about an hour!

Ingredients

  • 3/4 Cup of water
  • 3/4 Cup white sugar
  • 1 Small lemon
  • 2 Cups fresh figs (rinsed, stemmed, cut in 1/2)
  • MAKES APPROXIMATELY 2 CUPS OF JAM or 8 TWO TBS SERVINGS

Preparation

Step 1

Place wate and sugar in a pan and cook on low/medium simmer until sugar is dissolved

Step 2

Add figs and lemon juice and bring to a gentle boil (not a simmer but not a rolling boil) with lid slightly vented for and hour or so, stirring and mashing mixture periodically breaking down the figs.

Step 3

remove from heat and allow mixture to cool.

Step 4

Finish mash or if necessary use a few pulses in food processor or immersion blender.

Step 5

Place in sealed jars and refrigerate as you would any store bought jam OR proceed to canning.
