Ingredients
- 1 pkg yeast (traditional)
- 1/4 cup luke warm water
- 1/4 cup sugar
- 1/3 cup shortening
- 1 tsp salt
- 3/4 cup scalded milk
- 1/2 cup water
- 1 egg
- 4 1/2 cup flour
- 1/2 lb. lean ground beef
- Hy's seasoning or Lawry's
- diced onion (very small)
Preparation
Step 1
Dissolve: 1 pkg of yeast ( traditional ) in 1/4 cup lukewarm water ... let sit 10 minutes
Step 2
In a different bowl ..
Combine: 1/4 cup sugar
1/3 cup shortening
1 tsp salt
3/4 cup scalded milk
Cool to lukewarm by adding 1/2 cup water
Add: 1 egg and yeast mixture
Place everything in a big mixing bowl
Add: 4 1/2 cups flour
Mix until well blended.. I used my Kitchen Aid mixer.... But it also works with kneading with your hands..I used to do that all the time.
Place the dough ball in a large greased bowl. Cover with plastic wrap and a towel in a non drafty place
Let rise till double in size..an hour or two
Step 3
Meat Mixture:
Scramble Fry: 1/2 lb lean ground beef, Lowry’s or Hy’s seasoning salt and diced onions.
drain fat and pat meat with paper towel.
Cool down
Step 4
Heat frying oil to 360-375 degrees
Stir down risen dough... divide it into 4 balls
Take 1 ball of dough out of the bowl and roll out on lightly floured surface. Dough should be thin, but not see through.
Cut into 3””squares. Put a Tbsp of meat mixture on each square. Not too much.
*Carefully pinch the dough sides together. ( I double and triple pinch... because if these break open it makes a mess of the oil)
**I try frying one or two in the oil first... to make sure I pinched the seams well enough and to see if the temperature is okay) adjust the pinching or oil accordingly.
Deep fry 4 or 5 of the fatires at a time...do one side till it’s medium golden brown, then flip to the other side till it’s medium golden brown. ( sometimes they keep wanting to flip over and just want to be on one side. You have to hold those suckers down with a spatula... you need both sides cooked.
Remove and cool on a paper towel on a cooling rack.
