WW Taco Casserole

Ingredients

  • 1 pound lean ground turkey or chicken
  • 1 small onion, diced
  • 1 packet (about 1 oz) taco seasoning mix (you can use reduced-sodium if preferred)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 cup salsa
  • 1 cup reduced-fat shredded cheddar cheese
  • Cooking spray
  • Optional toppings: chopped lettuce, diced tomatoes, sliced black olives, chopped green onions, non-fat Greek yogurt or light sour cream

Preparation

Step 1

Preheat your oven to 375°F (190°C).
In a large skillet, cook the ground turkey or chicken over medium heat until it’s no longer pink. Add the diced onion and cook until softened.
Stir in the taco seasoning mix, black beans, corn, diced tomatoes with green chilies, and salsa. Cook for another 5-7 minutes, allowing the flavors to meld together.

Step 2

Spray a 9×13-inch baking dish with cooking spray. Spread the turkey or chicken mixture evenly into the dish.
Sprinkle the shredded cheddar cheese over the top of the mixture.
Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
Serve hot, garnished with your choice of toppings like chopped lettuce, diced tomatoes, sliced black olives, chopped green onions, and a dollop of non-fat Greek yogurt or light sour cream.
