Southwest Chicken

Ingredients

  • 1 TBS vegetable oil
  • 4 skinless boneless chicken breast halves
  • 1 10 oz can diced tomatoes with green chili peppers
  • 1 15oz can black beans rinsed and drained
  • 1 8.75 ounces whole kernel corn drained

Preparation

Step 1

Heat oil in a large skillet over medium high heat. Add chicken breast and sear for 2-3 minutes per side.

Step 2

Add tomatoes with green chili peppers black beans and corn. Reduce heat and let simmer until chicken is cooked through and the juices run clear--about 25 to 30 minutes.

Step 3

Sprinkle with cumin before serving.
