Overnight Cheeseburger Lasagne

Ingredients

  • 1 ½ lb hamburger
  • 1 Tbsp beef stock (powder)
  • 1 small onion, chopped
  • 2-3 cloves of garlic, minced
  • 15 oz can tomato sauce
  • 1 ½ cup water
  • ½ cup ketchup
  • 1 Tbsp prepared mustard
  • 1 15 oz tub ricotta cheese (Cottage cheese works well)
  • 1 C Cheddar Cheese, grated
  • 1 C Mozzarella Cheese, grated
  • 1/3 C grated parmesan cheese
  • 1 Tbsp of dried parsley (I’ve been using
  • 1 egg, beaten
  • 12 uncooked lasagna noodles
  • ½ C Cheddar, grated
  • ½ C Mozzarella
  • 1 medium tomato
  • dill pickle slices

Preparation

Step 1

1. Spray 13x9 inch glass-baking dish. Heat skillet, add ground beef, onion, garlic and powdered stock mix – cook 5-7 minutes or until beef is thoroughly cooked.
2. Add tomato sauce, water, ketchup, and mustard, mix well. Simmer 5 minutes, stirring occasionally.
3. Meanwhile, in medium bowl, combine ricotta and 1 cup of cheddar, 1 cup of mozzarella, the parmesan cheese, and parsley. Blend, then add egg and mix well.
4. Spread 1 cup beef mixture on bottom of dish. Arrange 4 uncooked noodles over sauce.
5. Spoon and spread half of the ricotta/cheese mixture. Repeat layers once. Top with remaining 4 noodles, beef mixture, ½ C cheddar and ½ C mozzarella cheeses.
6. Cover with foil, refrigerate at least 8 hours or overnight.
7. Preheat over to 350’F. Bake covered 45 minutes. Uncover, cook an additional 25 to 35 minutes or until bubbly.
8. Remove from oven cover with foil and let stand 5 to 10 minutes.
9. Top with lettuce, tomato, and pickle slices if desired.
