Ingredients
- 2T grated lime peel
- 1 Tbsp cumin seed (or 1 tsp grd
- cumin)
- 1 Tbsp cracked black pepper
- 1/2 tsp salt
- 2 Tbsp olive oil
- 1 clove garlic, finely chopped
- 4 (2lbs) Boneless pork loin or
- rib chops, about 1 inch
- thick or whole loin
- Mango slices to garnish
Preparation
Step 1
Mix all ingredients except pork loin to make a rub. Rub into loins and let set covered in fridge for a bit. More time - more intensity in flavor. Over hot grill, cook 4-6 minutes, turning frequently, until pork is no longer pink. (it should feel like the bottom of your palm, under your thumb, when you make a light first).
Step 2
NOTE: I have cooked these (loins) in the oven middle rack under the broiler turning once until done.
