Baja-Style Fried Rice

Ingredients

  • Grapeseed oil
  • Smoked bacon
  • Egg
  • Ginger
  • Carrots
  • Red onion
  • Rice
  • Oyster sauce
  • Corn
  • Sesame oil
  • Celery
  • Radish
  • Dried arbol chiles
  • Kosher salt

Preparation

Step 1

Cut the kernels off 2 corn cobs and place in a bowl. Peel and cut a red onion and place in another bowl.

Step 2

Dice 2 carrots and add them to the corn. Straight cut 3 celery stalks and add to the corn.

Step 3

Smash 8 cloves of garlic, then add a dash of salt and mesh. Scrape the skin off your ginger and min 1-1/2 tbsp.

Step 4

Chop 3 slices of bacon,

Step 5

Crack an egg into an empty bowl. Add 1 tbsp grapeseed oil to a wok and turn on high heat.

Step 6

Drop in 1 egg, add a little more oil and scramble the egg. Add ginger, garlic and onion.

Step 7

Crumble 2 arbol chiles into the mixture, then add the bacon. Mix with a ladle.

Step 8

Add 1/4 tsp salt, followed by 2 cups cooked white rice. Pour in 2 tbsp oyster sauce.

Step 9

Add your bowl of veggies and mix well. Cut the heat, drizzle 1 tsp sesame oil.

Step 10

Plate and sprinkle on some sesame seeds.
