Ingredients
- For the Rub:
- 2 tablespoons freshly ground coffee
- 2 tablespoons kosher salt
- 2 tablespoons paprika
- 1 tablespoon ancho chile powder
- 1 tablespoon dark brown sugar
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground black pepper
- 1/2 teaspoon cocoa powder
- 1/2 teaspoon coriander
- 2 racks spareribs preferably St. Louis cut
- Stout barbecue sauce
Preparation
Step 1
Mix all ingredients together and coat prepared ribs. Wrap in foil and refrigerate overnight. Remove from frig and let sit for 20 minutes. Warm oven to 225 degrees. Put ribs on solid cookie sheet and wrap tightly with foil. Bake in oven for 5 to 6 hours.
