Grilled Cuban Pork Chops

Ingredients

  • 2T grated lime peel
  • 1T cum seed (or 1 tsp grd cumin)
  • 1T cracked black pepper
  • 1/2 tsp salt
  • 2T olive oil
  • 1 clove garlic, finely chopped
  • 4 boneless pork loin or rib chops,
  • about 1 inch thick
  • mango slices to garnish

Preparation

Step 1

Mix all ingredients except pork loin to make a rub. Rub into loins and let set covered in refrigerator for 2 hours. More time - more intensity in flavor. Over hot grill, cook 4-6 minutes, turning frequently, until pork is no longer pink (it should feel like the bottom of your palm, under your thumb, when you make a light fist).

Step 2

These (loins) can be cooked in the oven middle rack under the broiler turning once until done.
