Ingredients
- 2T grated lime peel
- 1T cumin seed or 1tsp grd cumin
- 1T cracked black pepper
- 1/2tsp salt
- 2 T olive oil
- 1 clove garlic, finely chopped
- 4 boneless pork loin or rib chops
- about 1 inch thick
- Mango slices to garnish
Preparation
Step 1
Mix all ingredients except pork loin to make a rub. Rub into loins and let set covered in refrigerator for a bit (2 hours). More time more intensity in flavor. Over hot grill, cook 4-6 minutes, turning frequently, until pork is no longer pink. (It should feel like the bottom of your palm, under your thumb, when you make a light first).
Step 2
Can also be cooked in the oven middle rack under the broiler turning once until done.
