Baked Eggplant Margherita

Ingredients

  • 2 Eggplants
  • 1 C Tomato Sauce
  • 1 Garlic Cloves, Chopped
  • 1 1/2C Grated Mozzarella
  • 1 Tbsp Olive Oil
  • Seasonings as Desired:
  • Italian Seasonings, Mediter-
  • ranean Diet Seasoning
  • Blend, Greek Seasoning
  • Blend, Salt and/or Pepper

Preparation

Step 1

Slice the eggplants, rinse, salt and let sit for 20 - 30 minutes to draw out liquids. Preheat oven to 400 and prep a rimmed baking sheet (or two) with parchment paper. Thoroughly rinse eggplant and dry. Place the sliced eggplant pieces on the baking sheets - sprinkle on both sides with olive oil and pepper. Bake the eggplant for 10 minutes, flip them over and continue to bake until they begin to brown (20 minutes total). Remove eggplant from oven and top with tomato sauce, garlic, cheese and seasonings of choice. You can drizzle olive oil on top as desired. Return the eggplant to oven and bake for another 5 minutes or until the cheese has melted.
