Ingredients
- 8 oz. Frozen strawberries thawed and finely chopped
- 1 c powdered sugar
- 1.25 c heavy cream
- 12 lady fingers
- 1 pint strawberry or vanilla ice cream softened
- Fresh strawberries halved lengthwise
Preparation
Step 1
Gently stir together frozen strawberries and 1/2 cup sugar in medium bowl. Let stand until strawberries are juicy, about 10 minutes.
Step 2
Beat cream and remaining sugar in large bowl until stiff peaks form, about 2 minutes. Using a slotted spoon transfer strawberry mixture to whipped cream, reserving strawberry juice.
Step 3
Line an 8.5x4.5” loaf pan with parchment paper, letting excess hang ove sides. Spoon 1.25 c whipped cream mixture into pan; smooth the top. Dip 6 ladyfingers in strawberry juice and arrange an even layer on top of whipped cream mixture, trimming cookies if necessary. Spread ice cream over ladyfingers. Repeat with remaining 6 ladyfingers. Top with remaining whipped cream mixture. Cover pan freeze until firm, at least 4 hours and up to 2 weeks.
Step 4
Let stand at room temperature for 10 minutes before serving. Transfer to serving platter. Top with fresh strawberries.
