Ingredients
- 1/2 cup salted butter
- 3 tablespoons flour
- 1/4 cup very finely mined lean baked ham
- 1/2 cup finely minced green shallot
- 3 tablespoons finely minced onion
- 1/4 cup finely minced garlic
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon cayenne
- 1 cup rich beef stock
- 1/2 cup dry red wine
Preparation
Step 1
In a large heavy saucepan, melt the butter over low heat. Gradually add the flour, stirring constantly and cook over low heat until a light brown roux begins to form.
Step 2
Quickly add the ham, shallots, onion and garlic and cook, stirring for about 5 minutes more. Add the salt, pepper and cayenne and blend thoroughly.
Step 3
Keep the mixture simmering and very gradually add the beef stock and red wine, stirring constantly to keep the sauce smooth as possible. When the sauce is thoroughly blended, cook over very low heat for about 30 minutes, stirring from time to time to prevent scorching.
