Pumpkin, Ginger and Apple Soup

Ingredients

  • 550 grams pumpkin, roughly chopped
  • 2 apples, peeled and roughly chopped
  • 1 tablespoon roughly grated ginger
  • 1 potato, peeled and roughly chopped
  • 2 1/2 cups chicken stock
  • 1/4 cup cream
  • salt and pepper to taste
  • 1 small onion, chopped

Preparation

Step 1

Heat a small skillet, add vegetable oil and saute onion until translucent.

Step 2

Add ginger and stir well.

Step 3

Place onions and ginger into a large pot and add the remaining ingredients (except salt, pepper and cream) and simmer gently until vegetables are tender.

Step 4

Transfer to a blender or food processor and blend until smooth.

Step 5

Return to saucepan, add cream and season with salt and pepper.

Step 6

Serve with chopped fresh herbs.
