Ingredients
- 2 eggs
- 2 tablespoons caster sugar
- 1/2 cup flour
- 1 tablespoon cocoa powder
- 1 cup milk
Preparation
Step 1
Whisk eggs and sugar in a large jug until combined.
Step 2
Gradually whisk in sifted flour and cocoa, alternately with milk, until batter is combined and free of lumps. Cover with plastic wrap and stand for 30 minutes.
Step 3
Heat an 8 inch non-stick pan over medium heat. Brush lightly with a little melted butter. Pour 2-3 tablespoons of batter into pan; swirl evenly over base. Cook over medium heat 1 minute or until underside is cooked. Turn crepe over and cook other side. Transfer the crepe to a plate; cover with a tea towel to keep warm. Repeat process with remaining batter, greasing the pan when necessary.
