Ingredients
- 1/2 cup espresso coffee beans
- 3 cups cream
- 8 ounces dark cooking chocolate
- 3/4 cup caster sugar
- 6 egg yolks
- 1 cup milk
Preparation
Step 1
Chill ice cream machine.
Step 2
Combine coffee beans and cream in medium pan. Stir over medium heat until mixture starts to boil. Add the chocolate and remove from heat. Set the mixture aside for 1 minute before stirring.
Step 3
Combine sugar and egg yolks in large bowl; whisk until slightly thickened, then whisk in milk. Gradually add coffee mixture with beans. Whisk until smooth. Strain beans from mixture. Discard beans.
Step 4
Return coffee cream mixture to pan; stir over low heat until mixture thickens and will coat the back of a spoon. Remove form heat. Cool.
Step 5
Place mixture in ice cream machine and churn until firm. Place in freezer.
