White Chocolate Puffs with Dark Chocolate Sauce

Ingredients

  • 3/4 cup water
  • 2 ounces butter
  • 3/4 cup flour
  • 3 eggs, beaten
  • 1/4 cup custard powder
  • 1 tablespoon caster sugar
  • 1 1/2 cups milk
  • 4 3/4 ounces white chocolate, chopped
  • 1 tablespoon Grand Marnier
  • Chocolate Sauce:
  • 4 ounces dark chocolate, chopped
  • 1.2 cup cream

Preparation

Step 1

Preheat oven to 415 degrees. Line an oven tray with baking paper.

Step 2

Heat water and butter in pan; bring to boil; remove from heat. Add flour. Stir over heat until mixture forms a smooth ball. Allow to cool slightly. Place mixture in food processor. With motor constantly running, gradually add eggs to form a smooth, thick paste. Spoon 2 heaped tablespoons of mixture on tray 2 inches apart. Sprinkle with water. Bake 10 minutes. Reduce heat to 350 degrees; bake 12-15 minutes or until dough is puffed. Cut slit in each. Turn off oven, cool 5 minutes.

Step 3

Combine custard powder and sugar in pan; gradually add milk, stirring until smooth. Stir over low heat until mixture boils and thickens. Remove from heat; add chocolate and liqueur. Stir until melted. Cover surface with plastic wrap; cool.

Step 4

Stir custard until smooth, spoon into piping bag fitted with 1/2 inch plain nozzle. Pipe into each puff. Serve with warm chocolate sauce.

To make chocolate sauce:
Combine chocolate and cream in pan; stir over low heat until melted.
