Chocolate Mousse

Ingredients

  • 8 ounces dark chocolate
  • 3 eggs
  • 1/4 cup caster sugar
  • 2 teaspoons dark rum
  • 1 cup cream, whipped to soft peaks

Preparation

Step 1

Place chocolate in a small heatproof bowl; stir over a pan of simmering water until chocolate has melted and mixture is smooth. Set aside to cool.

Step 2

Using electric beaters, beat eggs and sugar in a small bowl for 5 minutes or until thick, pale and increased in volume.

Step 3

Transfer mixture to a large bowl. Using a metal spoon, fold melted chocolate and rum unto the egg mixture; then fold in whipped cream. Work quickly and lightly until mixture is just combined.

Step 4

Spoon mousse into four 1 cup ramekins. Refrigerate 2 hours or until mousse has set.
