Ingredients

  • Enchilada Pasta
  • 1-2 lbs ground beef browned and drained
  • 1 -16 oz package mini penne pasta cooked and drained
  • 1 -15 oz can red enchilada sauce
  • 1-15 oz can nacho cheese sauce
  • 2 C shredded Colby or Monterey Jack cheese
  • 1 package taco seasoning
  • 1 C water

Preparation

Step 1

Cook the beef and drain the grease, return to pan, stir in taco seasoning and water and start to simmer, add enchilada sauce and nacho cheese sauce and heat through. It a separate pan cook pasta accord to package directions, drain pasta and mix into meat sauce, pour into 9X13 pan and top with shredded cheese. Bake at 350° for 30 minutes. You may make ahead and store in refrigerator until ready to bake, remove from refrigerator and let come to room temp for 30 minutes then bake for 40 minutes.
