Broccolli Casserole

Can be made 1 day ahead and refrigerated or up to 1 month ahead and frozen. Thaw in fridge before baking... Never cover while baking.

Ingredients
- 3 boxes frozen chopped broccoli
- 1 can cream of mushroom soup
- 4 oz shredded cheddar
- 3/4 cup mayo
- 2 eggs - beaten
- salt to taste
- 1/2 cup butter - melted
- one sleeve Ritz crackers - crushed
Preparation
Step 1
Fully cook frozen broccoli and drain thoroughly.
Step 2
While the broccoli is cooking, mix together in large bowl: eggs, soup, cheese & mayo.
Step 3
Add broccoli to mixture - mix well.
Step 4
Pour into 9 x 13 baking dish - spread crumbled Ritz crackers over top. Drizzle melted butter over crumbs.
Step 5
Bake @ 350 for 45 minutes - uncovered.
