Lemony Herb ed Ricotta & Roasted tomato Appetizer

Ingredients

  • 1 pint cherry tomatoes
  • 1 T olive oil
  • 1/4 t. & 1/4 t. sugar
  • 2 T chopped basil
  • 1 T thyme leaves
  • 1 T chopped oregano
  • 1 t. grated lemon rind
  • 1 T lemon juice
  • 3/4 C ricotta
  • French baguette

Preparation

Step 1

Slice baguette into thin slices. Arrange on baking sheet coating with cooking spray. Toast under broiler 3 min or until golden brown, turning halfway thru.

Step 2

Preheat oven to 450.
Toss tomatoes with olive oil, salt & pepper & sugar. Bake one jelly roll pan, 20 min.

Step 3

Using spatula fold herbs into ricotta cheese. Spread 1 1/2 T over each toast slice; top with tomatoes & sprinkle with kosher salt
