Enchilada Casserole

Ingredients

  • 1 1/2 lbs ground beef
  • 1finely chopped onion
  • 2 cloves minced garlic
  • 2 cups Enchilada sauce
  • 1 can (15 oz) Black Beans
  • 1 can (7 oz) drained diced green chilies
  • 12-14 tortillas (corn or flour)
  • 1 1/4 cups shredded cheddar cheese
  • 1 1/4 cups shredded Monterey Jack cheese

Preparation

Step 1

Preheat oven to 350 degrees.
Spray a 9 X 13 inch pan with non-stick spray

Step 2

Brown beef in large skillet over medium heat. When about halfway browned add onion. Cook until beef is browned and onion is soft. Reduce heat to low. Add garlic and cook for 1 minute stirring continuously. Add 1 1/4 cup of enchilada sauce, beans and green chilies. Cook for 1-2 minutes while stirring to combine.

Step 3

Spread 2 tablespoons of enchilada sauce in the bottom of pan. Layer 1/4 of the tortillas on the bottom, then spread 1/3 of the beef mixture and 1/4 of each cheese. Repeat layers 2 more times. Top with last of tortillas, the remaining enchilada sauce and remaining cheese.

Step 4

Cover with foil and bake for 30-35 minutes.
