Ham & Cheese Keto Breakfast Biscuits

Ingredients

  • 3 ounces cream cheese,
  • SOFTENED
  • 1 C. Shredded Cheddar Cheese
  • 2 Eggs
  • 2 C. Almond Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/4 C. Heavy Cream (make sure
  • get all out of cup)
  • 1 Tbsp Melted Butter
  • 1 3/4 C. Chopped Ham
  • TOPPING:
  • 1 Tbsp Melted Butter

Preparation

Step 1

Preheat oven to 350. In a mixing bowl combine the softened cream cheese, cheddar cheese and eggs. Stir until cream cheese is smooth with no clumps.

Step 2

Add almond flour, baking powder, salt, heavy cream and melted butter. Stir until combined. Fold in the chopped ham. Do NOT overmix or biscuits will be tough. Chill the dough for 10-15 minutes.

Step 3

Using small cookie or ice cream scoop the biscuits out onto a greased or lined baking sheet. Lightly press the dough down. Bake 13-15minutes until golden. Brush with melted butter.

Step 4

NOTE: You can use unsweetened almond milk instead of cream if you want the fat content decreased.

The dough will be thick, be careful not to overmix.

If you use a small cookie/ice cream scoop, you will get 22-24 biscuits. If you wan to use a larger/full size scoop, you will get about 12 biscuits with about 4 net carbs each. The baking time would be 16-18 minutes for the large biscuits.
