Spaghetti Carbonara - #2

Ingredients

  • 1/2 lb bacon strips chopped
  • 1 pkg (16 oz) fettuccine
  • 1 mall onion - finely chopped
  • 2 garlic cloves - minced
  • 1 cup half & half cream
  • 4 large eggs lightly eaten
  • 1/2 cup grated Romano cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 Tablespoon minced fresh parsley
  • Addl grated Romano cheese to taste

Preparation

Step 1

In large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with slotted spoon & drain on paper towels. Discard drippings, reserving only 1 Tablespoon in pan.

In a Dutch oven, cook fettuccine. Drain & Return to pan.
Add onion to drippings in skillet, cook and stir over medium heat 2-3 minutes or unt tender - do not burn. Add garlic, cook 1 minutes longer. Reduce heat to med.p-low. Stir in cream. In a small bowl, whisk small amount of warm cream into eggs. Return all to pan, whisking constantly. Cook 8-10 minutes stirring constantly.

Stir in cheese, salt, pepper and bacon into sauce. Add fettuccine and toss to combine. Sprinkle with parsley & addl cheese as desired. Serve immediately.
