Ingredients
- For pizza crust
- 1 c. shredded mozzarella
- ¾ tsp. Baking powder
- ½ tsp garlic powder
- ¼ tsp. Black pepper
- 1 (15-oz.) can chickpeas, well drained
- Kosher salt
- Extra virgin olive oil
- For pizza topping
- c. shredded mozzarella
- 1/3 c. freshly grated Parmesan
- ½ c. tomato sauce
- Sliced red onions
- Sliced pickled jalapenos
Preparation
Step 1
Preheat oven to 400° and line a large baking sheet with parchment paper. In a food processor or blender, blend cheeses, baking powder, garlic powder, pepper, chickpeas, and a pinch of salt until smooth.
Step 2
Shape dough into a 10” circle on baking sheet. Brush dough with olive oil and sprinkle lightly with salt.
Step 3
Bake crust until golden, 13 to 15 minutes. Remove from oven and top with tomato sauce, cheeses, red onions, and pickled jalapenos.
Step 4
Return to oven and continue baking until cheese is melty, 5 to 7 minutes more.
