Ingredients
- 6 bunches chopped curly parsley (including small stems)
- 3/4 cup chopped mint
- 1 cup prepared coarse wheat bulgar
- 1.5 cups diced cucumber no seeds
- 2 cups chopped tomatoes
- 3/4 cup chopped green onions (tops included)
- 3 TBS lemon juice
- 2 cloves pressed garlic
- 3 TBS olive oil
- 1 TBS sea salt
Preparation
Step 1
In a large bowl add parsley and mint. Toss well. Add bulgar, cucumber, tomatoes, onion and salt. Mix well.
Step 2
In a glass measuring cup, whisk the olive oil, minced pressed garlic and lemon juice. Pour into salad and mix.
The parsley and mint can be chopped together in a food processor.
