Roasted New Potatoes with Oregano

Ingredients

  • 10-12 small red potatoes (1 1/2 lbs), cut in half.
  • 1 Tbsp chopped fresh or 1 tsp dried oregano leaves
  • 2 tsp olive oil
  • 1/4 tsp salt
  • 1/4 pepper

Preparation

Step 1

Heat oven to 400. Line 15x10 pan with foil. Spray with cooking spray.

Step 2

In medium bowl, toss all ingredients. Spread in single layer on pan.

Step 3

Roast uncovered 30-35 minutes, turning after 15 minutes, until potatoes are tender.
