Lemon-Lime Soda Cake with Vanilla Glaze

Ingredients

  • 1 1/2 c unsalted butter softened
  • 3 c flour
  • 3 c sugar
  • 5 eggs
  • 2 T plus 1/2 t lemon zest or extract DIVIDED
  • 1 cup plus 3 T 7 up or Sprite DIVIDED
  • 3 c powdered sugar
  • 1/2 c whole milk
  • 1/2 t vanilla extract

Preparation

Step 1

Preheat oven to 325°. Generously grease and flour a 10 inch Bundt pan.

Step 2

Sugar and egg until creamy and smooth about two minutes. Reduce speed to low and add eggs one at a time beating well after each addition. Add flour 1 cup at a time meeting until after each addition. Stir in 2 tablespoons zest or extract and one cup soft drink. Transfer to prepared pan.

Step 3

Bake until wooden pick comes out clean. About an hour and 15 minutes. Meanwhile, beat powdered sugar, milk, vanilla remaining 3 T soft drink and 1/2 t zest or extract with mixer on medium until glaze is smooth, about 45 seconds. Set aside.

Step 4

Let cool in pan for 15 minutes. Using a butter knife, pierce cake 12-16 times. Pour 1/2 c glaze over cake. Let sit for 10 minutes. Invert into platter and remove pan. Pour remaining glaze over top.
