Ingredients
- 2 cups sugar
- ½ cup milk
- 1 stick butter
- ¼ cup cocoa powder
- 2 cups regular rolled oats
- 1 cup peanut or almond butter
- ½ cup chopped peanuts
- 1 tablespoon vanilla extract
Preparation
Step 1
Line a large baking sheet with waxed or parchment paper; set aside. In a medium saucepan combine sugar, milk, butter, and cocoa; bring to boiling. Reduce heat and simmer for 1 minute; remove from heat. Stir in oats, peanut butter, peanuts, and vanilla.
Step 2
Drop spoonfuls of the mixture onto the prepared baking sheet and let stand at room temperature about 30 minutes or until set. Store cookies in an airtight container and chill for up to 3 days.
