Ingredients
- 1 Tbsp olive oil
- 2 slices thick bacon diced
- 1 tsp minced onion
- 1/2 tea kosher salt
- 1/2 tea pepper
- 1 clove mined garlic
- 1 Tbsp flour
- 3/4 cup milk
- 4 oz cream cheese cubed
- 4 oz cheddar cheese grated
- 2 lbs fresh or frozen corn kernels (thawed)
- 1/8 tsp paprika
Preparation
Step 1
Heat oven 375 degrees.heat oil in large skillet on medium. Add bacon and cook stirring occasionally, until slightly brown on the edges. 5 to 6 minutes.
Step 2
Discard all but 2 Tbsp fat. Add onions, season with salt and pepper and cook stirring until tender 5 to 6 minutes. Stir in garlic cook 1 minute longer.
Step 3
Sprinkle flour mixture over onion mixture and cook 1 minute. Gradually stir in milk. Simmer stirring occasionally until slightly thickened. 1 to 2 minutes/
Step 4
Add cream cheese and cheddar and cook stirring until melted, stir in corn
and paprika.
Step 5
Transfer mixture to a 6 oz ramekins or 2 quart baking dish and bake till bubbling around edges 15 to 20 minutes. Let cool 5 minutes before serving.
