Strawberry Banana Bread with Vanilla Chantilly Cream

Ingredients

  • 14 T unsalted butter melted
  • 2 c flour
  • a t salt
  • 1 t baking powder
  • 3/4 t baking soda
  • 3/4 t nutmeg
  • 2 1/4 c sugar divided
  • 3 eggs
  • 2 c mashed over ripe bananas (4-5 bananas)
  • 1/2 c dried strawberries coarsely chopped
  • 2 c cold heavy whipping cream
  • 1/2 c vanilla bean pod, split lengthwise, seeds scraped

Preparation

Step 1

Preheat oven to 350. Butter and flour loaf pan

Step 2

Stir together flour, salt, baking powder, baking soda, nutmeg and 2 c sugar. Whisk together eggs in separate bowl. Stir in bananas until combined. Pour egg mixture over flour mixture and whisk until combined. Fold in strawberries and stir in melted butter.

Step 3

Pour batter into prepared pan, filling to 3/4" from the top. Bake until golden brown, about 45 minutes. Loosely cover with foil and bake until cooked through, another 35-45 minutes.

Step 4

Meanwhile, beat cold cream, vanilla been seeds and remaining 1/4 c sugar with whisk on medium, until cream holds soft peaks, 3-4 minutes.

Step 5

Once done, let it cool in pan for 15 minutes. While still warm, invert onto serving plate. Serve warm with whipped cream.
