Ingredients
- 1/3 large chicken breasts
- Salt & pepper
- 1 1/2 tsp garlic power divided
- /4 tsp paprika
- 1 cup broccoli florets chopped
- 1/2 C red bell pepper, diced
- 1 C mild cheddar cheese
- 1 tbsp mayo
- 2 tbsp olive oil
Preparation
Step 1
Preheat oven 2 425 degrees F.
Step 2
Seson both sides of chicken breast with dry rub (see recipe). Use a sharp knife to cut a slice through the middle of the chicken breasts to create a pocket for the filling
Step 3
Filling: microwave broccoli for about 2 minutes in 2 tbsp of water. Drain any excess water. In a bowl add the bell pepper, cheese, mayo and broccoli, along with garlic powder, salt & pepper to taste. Mix until combined. Divide mixture between he chicken breasts, use a toothpick to secure if needed.
Step 4
Heat a large, oven safe skillet over medium heat and add the olive oil. Sear the chicken for 3-4 minutes on each side. Cover the skillet with foil and bake in preheated oven for 15-17 minutes, or tumult the chicken reads 165 degrees. Let rest covered for 5 minutes before enjoying.
