Ingredients

  • 1 c milk
  • 1/4 c flour
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 4 eggs
  • zest of 1 lemon
  • 4 tbsp butter
  • 3/4 c blueberries
  • 2 tsp powdered sugar

Preparation

Step 1

Place rack in middle of oven. Preheat oven to 425 degrees.
Combine milk,flour, sugar, salt, eggs and zest in a blender;blend until smooth.
Place butter in 10-12 inch cast iron skillet and put in oven until butter is melted. 3-5 minutes. Remove from oven. Swirl pan to coat with butter. pour batter into pan. Bake 17-20 minutes or until puffed and golden brown. Remove from oven and sprinkle with blueberries. sift powdered sugar over top.
