Chicken Burritos by Rhonda

Ingredients

  • *2 cups cooked chicken
  • 1 onion, chopped
  • 2 med. poblano peppers, chopped
  • 2 T minced garlic
  • 1 tomato, chopped
  • 1/2 - 2/3 cup chicken broth
  • 4 T salsa of your choice (I use green salsa)
  • 1 tsp chili adobe seasoning
  • 1 tsp cayenne seasoning
  • 1 tsp oregano
  • salt and pepper
  • large tortillas

Preparation

Step 1

Cook onion and peppers in large skillet until soft. Add garlic and chicken. Stir chicken to shred into smaller pieces. Add tomato, chili adobo, cayenne, and oregano seasoning and stir into mixture. Add chicken broth, salsa and bring to boil, then turn the heat down and let simmer for 20-30 minutes. Season to taste

Step 2

Have desired toppings to put into burrito such as diced raw onions, pico de gayo, shredded Mexican cheese, guacamole, cilantro and salsa of your choice.

Step 3

Assemble burritos with tortilla on the plate. Spoon chicken mixture in the middle and top with your favorite toppings and salsa. Fold the ends in and roll into a log shape. Serve with Mexican rice, or frijoles, or corn

*Take raw chicken (breasts and/or thighs) and let it boil in chicken broth with 1 bay leaf. After the chicken is cooked, shred the chicken with two forks. Proceed with cooking as above. You can also replace the poblano peppers with green bell pepper.
