Prudent Potatoes Au Gratin with Ham

Ingredients

  • 1/2 T unsalted butter
  • 1 T olive oil
  • 1 large onion, thinly sliced (2 c)
  • 4 lbs. potatoes, peeled and thinly sliced
  • 1/2 lb. gruyere cheese, grated
  • 1/2 lb. fontina cheese, grated
  • 1/2 c Parmesan cheese, grated
  • 4 slices ham, chopped
  • 1 t fresh sage
  • 1 t sea salt
  • 1/2 t pepper
  • 2 c heavy cream

Preparation

Step 1

Butter 9x13 pan. Melt butter and olive oil in sauté pan and add onion. Cook on low until limp and caramelized but not burned (15-25 mins). Heat oven to 375.

Step 2

Peel potatoes and slice thinly. Toss together cheeses.

Step 3

Place layer of potatoes in dish, sprinkle onion, then ham, then cheeses, then sage and so on ending with cheeses. Mix salt and pepper with cream. Pour over all being careful not to disturb top layer of cheese.

Step 4

Cook for 1-1 1/2 hours until cooked through and golden brown.
