Ingredients
- 2 Tbsp butter
- 1 1/2 to 2 lbs boneless skinless chicken breasts, cut into cubes
- 2 cloves garlic
- 1 small onion, chopped
- 1 1/3 cup long grain rice
- 1 1/3 cup chicken broth
- 1 tsp salt
- 3/4 tsp pepper
- 1 tsp garlic powder
- 1/2 cup milk
- 1 1/2 Tbsp flour
- 1-2 cups fresh broccoli, cooked
- 1 1/2 to 2 cups shredded cheddar cheese
Preparation
Step 1
Turn instant pot to saute. Add butter to inner pot and heat til hot. When hot, add chicken, garlic, and onion. Cook mixture til onion starts to get translucent. Add rice, broth, and seasonings. Stir well.
Step 2
Whisk together milk and flour and set aside. Cook on high pressure 5 minutes. Quick release. Add milk and flour mixture and mix til well combined. Add broccoli and cheese and stir til combined. Serve immediately.
