Ingredients

  • 1/2 lb bacon
  • 4 cups cubed hash browns or peeled diced potatoes
  • 1/2 onion, diced
  • 6 eggs, beaten
  • 1 cup shredded cheddar cheese
  • 2 green onions, chopped

Preparation

Step 1

Cook bacon. Reserve 2 Tbsp bacon fat. Add hash browns and diced onions to bacon drippings. Cover. Cook til potatoes are tender, about 10-12 mins. Crumble bacon into potatoes. Add beaten eggs and stir until they are fully cooked, about 2 minutes. Sprinkle cheese and green onions on top.
