Instant Pot Broccoli Cheddar Soup/Jen

Ingredients

  • 5-6 Potatoes- diced
  • 2 Tbs Butter
  • 1 Sm Onion diced
  • 1 head broccoli chopped very small
  • 1 C shredded Carrots
  • 32 oz Chicken Broth
  • 1/2 tsp Pepper
  • 1 tsp Salt
  • 1/4 tsp crushed Red Pepper Flakes or Cayenne Pepper
  • 1/4 C cold Water
  • 1/4 C Cornstarch
  • 2 C Heavy Whipping Cream
  • 3 C Sharp Cheddar Cheese, Shredded - or more( 1 1/2 8oz packs) Can use Velvetta

Preparation

Step 1

Add butter, diced onion , diced broccoli, carrots, chicken broth, pepper, salt and crushed red pepper flakes to pot. Secure lid in place and turn valve to sealing. Put on manual and cook for 6 mins. When cook time ends, do quick release.
In a small bowl, whisk together cold water and cornstarch. Put pot to "saute" and add cornstarch mixture. Also add heavy whipping cream and cheddar cheese.
Cook for 3-4 mins. while stirring constantly until soup thickens and cheese melts completely.
Can serve with Ham and Swiss sandwiches or Chicken spread sandwiches.
