Instant Pot Chicken Tortilla Soup

Ingredients

  • 1/2 lb Chicken Breast
  • 1 stalk Celery , sliced
  • 1/2 C Frozen Whole Kernel corn, thawed
  • 2 tsp Cumin
  • 4 C Chicken Broth
  • 1 Carrot peeled and chopped
  • 1 -15 oz Can Black Beans rinsed and drained
  • 2 Tbs Tomato Paste
  • 2 tsp Chili Powder

Preparation

Step 1

Season the chicken with S and P. Add the carrot, celery, chicken, beans, corn, tomato paste, cumin, chili powder and broth to pot.
Close lid and set on 5 mins on high. When done quick release.
Remove the chicken and spread and return to the pot. Serve topped with tortilla strips.
