Taco Rice Casserole

Ingredients

  • 2 lbs ground turkey
  • 1 onion chopped
  • 1 zucchini shredded
  • 2 cups corn
  • 2 cans of black beans (drained)
  • 2 cans diced tomatoes with green chilis (rotel)
  • 1 pkg taco seasoning
  • 4 cups of cooked rice
  • handfuls of shredded cheese
  • 2 9 x 13 pans

Preparation

Step 1

brown your ground turkey. Add in chopped onion and zucchini and cook until soft.

Step 2

Stir in taco seasoning

Step 3

add corn, tomatoes, and beans

Step 4

spray 2 9 x 13 pans with nonstick spray. Spoon2 cups of rice into the bottom of each pan, spreading it out evenly

Step 5

spoon meat mixture over the rice

Step 6

Top with shredded cheese.

Step 7

bake covered at 350 degrees for about 25 minutes until cooked through

Step 8

If you want to freeze cover with foil label it. to reheat let it thaw overnightin fridge and bake at 350 for 45 minutes covered with the foil , remove foil and cook until the top is brown.
