Mini Gorgonzola Popovers

Ingredients

  • 1 large egg
  • 1/2 cup milk
  • 1 Tbsp butter, melted
  • 1/2 cup flour
  • 1/4 tsp salt
  • pinch black pepper
  • 1 oz gorgonzola, crumbled
  • 1/2 tsp dry thyme

Preparation

Step 1

In a bowl, whisk together the egg, milk, butter, salt and pepper. Whisk in the cheese and thyme. Stir in the flour and allow batter to rest for 10 minutes.

Step 2

Preheat the oven to 425 degrees F. butter a mini muffin pan with 12 cups. Fill each cup to the top with batter. Bake 15-18 minutes or until golden brown. Remove popovers from the pan and serve warm
